Meal plan

Someday, it will not be my responsibility to feed any other human besides myself. I look forward to that day...but it is not today. So in the meantime, I meal plan.

This week is a little unusual in that we have three dinners out - but I've got plans for the other nights.
Monday - dinner out for a family birthday
Tuesday - date night; kids get chicken rice, meatballs and veggies with the babysitter
Wednesday - Mexican quinoa
Thursday - steak and potatoes
Friday - BLTs
Saturday - dinner at the apple orchard

Breakfasts are yogurt and granola, cocowheats, or bagels. I'm working on planning out the kids' snacks, too, so that they are more balanced than goldfish crackers and applesauce - so we've also got peanut butter toast, fruit, yogurt, sandwich crackers, cottage cheese, broccoli pancakes, cheese sticks. If you've got kids, what are your favorite well-rounded snacks that you can carry with you or pull together in five minutes?

  1. Bananas, mostly! We eat two to three bunches a week. Apples, carrots, grapes, other fruits, peanut butter bread, string cheese, plain popcorn, celery with peanut butter, raisins, yogurt raisins, dried fruit. I really focus on healthy snacks because my husband has not so great eating habits so I try to counter it by us eating healthy. I won't always be able to control what my kids eat so I want them to have a healthy base. I also cook with a wide variety of healthy veggies so they're used to them. If they are in the grocery store with me, they get to pick the fruit, at least one thing each depending on what they want. I try to steer them towards the in-season fruit as its cheaper and way better tasting. Right now we are on a kiwi and honeydew kick :)
